The Department of Retail Services is a university run operation consisting of both residential and retail food service units, as well as 20|20 Catering, vending and concessions.

Job Summary

Under the general supervision of the Executive Chef, this position supports and guides the day to day culinary activities of the residential units. The responsibilities of this position may include but are not limited to; training culinary staff, overseeing day to day menu execution and service, reviewing and advising on special theme meals, adjusting recipes as needed, ensuring all HACCP standard are being met, and communicating needs of the operations to the executive chef. Additional responsibilities may include hiring, scheduling, and evaluating culinary staff, oversight of production for commissary, cold food production, and production for café stations. Attend high profile catering events, evaluating labor and food costs, as well as inventory control of food supplies.

Hours of Operation: Sandburg Cafe is a 7 day operation, with unit hours ranging from 7:00 am to 7:00 pm. As a result, the individual in this position may be required to work evening and/or weekend hours. The working hours of this position are not determined at this time. In addition, hours may vary depending on operational needs. The hours will be finalized by the closing date of the position and applicants will be contacted to confirm their interest in the position. Position also requires the ability to stand for extended periods of time.

Salary: This position comes with a competitive salary and benefit package. The minimum starting hourly rate is $18.00/hour; the final hourly rate is dependent upon the finalist’s experience, education, qualifications and equity within the department.

Minimum Qualifications

• Experience in supervisory and/or lead work functions in the kitchen environment.

Preferred Qualifications

• Experience working in a large volume operation, such as catering, university or similar, with gross sales in excess of $1 million;
• Experience in scratch cooking;
• Experience with computerized ordering/inventory systems, such as Food Service Suite (FSS) and Event Management System (EMS) or similar;
• Experience in employee scheduling;
• Experience with staff development and training;
• Experience in new recipe development;
• Knowledge of various cuisines;
• Knowledge of essential food service equipment;
• Certificate, or Technical Diploma or Associate’s Degree (or higher) in Hospitality, Culinary Arts, or related field;
• ServSafe Food Handler or similar certification.
